Frank Torres' family has been growing coffee and plantain in their 2-hectare-farm for over 70 years, and he has been entrusted with the stewardship of his family farm. He ferments his coffee with the Resposado method, meaning to leave the coffee to ferment in-cherry for a period of time in a temperature-controlled environment prior to depulping. This adds tropical fruit notes to the coffee and significantly enhances the texture of the final cup!
