Peru's rich coffee culture is deeply rooted in cooperative structures, particularly to support coffee cultivated on small farms. A prime illustration is Central de Cafetaleros del Nororiente (CECANOR), with dedicated coffee producers located in more than 70 communities across Northern Peru.  These producers follow organic farm management practice attuned to their cultural connection with the land. They typically cultivate coffee on just a few acres of land intercropped with shade trees, bananas, corn, and beans.

During the harvest, each producer practices selective picking with focus on picking only fully ripened cherries, which are then processed with the farms micro-mill. At the mill, the cherries are washed and floated to remove damaged and less dense coffee.  The selected cherries are then depulped, fermented, washed and gently dried and stored until it is time to prepare the coffee for export.

CECANOR invests in critical infrastructure encompassing road enhancements and the establishment of local warehouses.  CECANOR also provides comprehensive technical support to farmers. This encompasses guidance starting with seed selection and extends to valuable assistance in navigating the certification process. CECANOR partners with an export company called PROASSA, which meticulously prepares coffee for export. This coordinated effort ensures traceability and maintains quality control during the post-harvest phase.

  • Colombia Francy Castillo Geisha & Pink Bourbon Natural       Red Grape, Clementine, Marzipan

Variety: Geisha & Pink Bourbon

Process: Natural

Fermentation: 70hr in cherry, 48-72hr anaerobic

Drying: 6 Days Patio & 20-25 Days Raised Beds

Producer: Francy Castillo

Farm: Finca El Uberrimo

Elevation:  2018 MASL

Region: Arboleda, Narino

Origin: Colombia

Francy and her four sisters grew up helping on their family’s coffee farm, inspiring her to study agronomy to strengthen the business. She financed her degree through farm work and graduated in 2019, later joining the FNC as a field assistant in Arboleda, Nariño. She also gained sensory training at a private export lab in Buesaco.

In 2017, Francy began planting new coffee varieties on land loaned from her father, applying soil conservation, wider planting distances, and minimal agrochemical use to protect microbial life and plant health. With support from family and neighbors for planting, fertilizing, and harvesting, her dedication and innovative practices quickly set her apart as one of Nariño’s leading producers.

Nariño’s high elevation, volcanic soils, and varied landscapes all contribute to the exceptional quality of its coffees, now vital to both the regional economy and Colombia’s global reputation.

We met Francy on our recent trip to Colombia, and she is as we heard and imagined -- passionate, motivated, caring, and a generous young woman who takes great care of her family, her village, and everyone she comes across. Her work and mission extends beyond her own farm, with the Berruecos project, which helps sustain all the small lot producers in the remote farms. We will continue to support her coffee and the flourishing of her community.

COFFEES OF THE MONTH - SEP 2025

Wilton Benitez is a Colombian coffee producer specialized in experimental processing. El Paraíso 92 is a family farm that uses innovative farming systems such as terraces, drip irrigation, shading and laboratory nutrition count aimed to produce a unique coffee. The farm also houses a processing plant, microbiology lab and quality lab, for careful management of conditions to guide decisions throughout the processing stages, resulting in great quality control in their production.

This Yellow Bourbon enters our line up for the very first time, for its beautifully presented fruity notes without being too overwhelming. This coffee reminds us of the well-loved Paradise Koji Striped Bourbon, yet with a refinement that you will notice once you taste the cup.

Wilton never stops experimenting with new processes and yeast strain cultivation, and studying their impact on coffee quality and flavours. His passion for continuous learning is bound to bring him great success -- yet he generously shares his processes with producers, helping them achieve better quality, hence marketablity of their coffees.
