Brazil_Um_Arara.png

Variety: Arara

Process: Natural, 36hr fermentation

Drying: 36 days raised

Elevation: 1300 - 1500 MASL

Farm: Fazenda Um

Producer: Um family

Region: Espirito Santo

Origin: Brazil

Fazenda Um started as a retirement dream for second generation Brazilian Korean, Stefano Um, from an abandoned farm. Now with the hardwork of his sons, Boram (2023 World Barista Champion) and Garam (2023 World Brewers Cup Third Place), we have an exceptional representation of Brazilian coffee of high quality, traceability, with experimental growing and processing techniques.

This arara is believed to be a natural cross between Yellow Catuai and Obata, known for its yellow fruit, and a late-ripening character, which may be a contributor to its cup quality - with the longer maturation time that makes this coffee more complex, with a higher sugar content, and a fuller body.

  • Burundi Muyinga Hafi Bourbon Natural Auction Lot GC05

Golden Raisin, Haskap Berry, Kyoho Grape, Cinnamon

Variety: Bourbon

Process: Natural

Producer: Hafi Coffee

Elevation: 1715 MASL
Region: Muyinga province
Origin: Burundi

The remotest of the remote! The producers of Hafi Coffee travel more than a day's journey to deliver their freshly harvested coffees to the nearest wet mill, which is another 6 hours' journey from the capital. These remote producers have become masters of the natural process - they developed a controlled 72hr anaerobic fermentation that gives the coffee a jammy, wonderfully complex flavours. The group of farmers named themselves Hafi - as it means "close", representing their dream to one day have their own washing station nearby.

We purchased this particular lot, GC05, via the Grand Cru Brurundi auction held by JNP, whose goal has been to empower women producers, improve their financial literacy, education for them and their children, and invest in clean water solutions. They provide all their producers with a Dashimi ("thankful" in Kirundi) bonus second payment based on their coffee quality, which allows women to pay for their children's education, invest in the coffee farms, and save money for their families for the first time.

This coffee has a crisp golden raisin fruit note, yet takes to the depth with a comforting spice and aromatic cedar character. What a treat of a coffee, an unusual gem we were lucky enough to discover!

Variety: Geisha

Process: Washed

Elevation: 2148 MASL

Farm: Finca El Uberrimo

Producer: Francy Castillo

Francy grew up with her 4 sisters on their family coffee farm.

She studied Agronomy, worked in the field, and in sensory development in an export lab, to deepen her knowledge and appreciation for the industry. Since her farm is remote, it was previously challenging to access the international market. With the help of our green importer Apex, we now proudly showcase this beautiful coffee with such high clarity and a depth of fruity notes. The crisp transparency of flavours in this coffee makes every sip an absolute enjoyment.
