Francy and her four sisters grew up helping on their family’s coffee farm, inspiring her to study agronomy to strengthen the business. She financed her degree through farm work and graduated in 2019, later joining the FNC as a field assistant in Arboleda, Nariño. She also gained sensory training at a private export lab in Buesaco.

In 2017, Francy began planting  new coffee varieties on land loaned from her father, applying soil conservation, wider planting distances, and minimal agrochemical use to protect microbial life and plant health. This particular 4-Rarities blend of Pink Bourbon, Geisha, Sidra, and Wush Wush, is a result of her innvoation, contrasting her father Fidencio's belief in continuing the estabilished varieties.

With support from family and neighbors for planting, fertilizing, and harvesting, her dedication and innovative practices quickly set her apart as one of Nariño’s leading producers.

Nariño’s high elevation, volcanic soils, and varied landscapes all contribute to the exceptional quality of its coffees, now vital to both the regional economy and Colombia’s global reputation.

We met Francy on our recent trip to Colombia, and she is as we heard and imagined -- passionate, motivated, caring, and a generous young woman who takes great care of her family, her village, and everyone she comes across. Her work and mission extends beyond her own farm, with the Berruecos project, which helps sustain all the small lot producers in the remote farms. We will continue to support her coffee and the flourishing of her community.​

Fidencio Castillo's coffee journey began with just 1,500 Caturra and Colombia coffee trees. Through years of dedication and the support of his family, the farm has grown to more than 20,000 thriving productive trees.

 

Inspired by their father's passion for coffee, three of Fidencio's daughters—including renowned producer Francy Castillo (whose coffee is also on this month's flight!)—pursued studies in agronomy and food processing. Together, they are driven by a shared commitment to innovation, continually exploring new approaches to coffee cultivation and processing to elevate quality and sustainability.

In the month of June, we celebrate with this father-daughter duo - Fidencio, brings in his established Caturra/Colombia varieties with honey process, giving us this deeply sweet and approachable cup,  allowing us to taste in contrast to his daughter Francy's new rare varieties done in the washed process!

       Every month, we bring on 3 new coffees in our lineup, serving them on Tasting Menu, which include Flight of 3 Coffees 1 Way, or Flight of 1 Coffee 3 Ways! These coffees are designed each month to broaden our coffee journey, to experience a wide spectrum of flavours that coffee can achieve from its origin, variety, and processes!

COFFEES OF THE MONTH - JUN 2026

Gesha Village is one of the most cherished coffee producers on the planet with 471-hectares in the Bench Maji zone of Ethiopia, nearby the town of Gesha and the Gori Gesha forest, the birthplace of the Gesha variety.

Owned and operated by Adam Overton and Rachel Samuel with the mentorship of Willem Boot, this project was started in 2007 and has quickly developed to be an idolized producer in the specialty coffee world. With ~320 hectares planted of Gesha 1931, Gori Gesha and Illubabor Forest varieties, throughout 8 different zones that correlate with unique terroir.

This coffee is delicious with a floral nuance, complex fruit notes of mandarin, acai berry (or a combination of blueberry, black currant, black grape), with milk chocolate type sweetness!
